Moroccan Carrot Salad

·3 cups shredded carrots
·1 fresh pineapple, cubed
·3 oranges, peeled and segmented
·½ cup golden raisins
·Freshly squeezed juice from 1 ½ to 2 lemons
·2 tsp cinnamon
·¼ cup apple cider vinegar
·½ cup olive oil
·Volcanic or sea salt to taste
Mix all ingredients in a large bowl and let mingle for at least an hour!
