Every superhero needs to know their way around the city to save anyone in need and the grocery store to make healthy meals to keep their superpowers strong. This superfood salmon salad boasts of yummy vegetables, good quality fat from salmon, avocado oil, pepitas, and feta, and some great energy producing carbohydrates from the sweet potatoes.

Ingredients for the Superfood Salmon Salad:superfood salmon salad

    • 2 – 4oz boneless salmon filets (wild-caught if possible)
    • 1 Tablespoon avocado oil
    • sea salt and pepper
    • 4 cups baby kale + romaine (or spring mix)
    • 2 cups sweet potato croutons
    • 1/2 avocado, sliced
    • 1/4 cup pickled red onions
    • 1/4 cup crumbled feta
    • 2 Tablespoons pepitas
    • Lemon vinaigrette dressing

To make the Salad:


1.  Make pickled red onions, the lemon vinaigrette dressing and bake your sweet potato croutons.

2.  Sear salmon. Season salmon fillets with sea salt and ground pepper. Heat oil in a large skillet (a cast-iron works great) over medium-high heat. Place salmon in pan, skin side up for about 4 minutes or until the flesh is golden brown. Turn and cook until salmon is medium-rare, about 4 more minutes.
3.  In a salad bowl, toss greens with sweet potato croutons, pickled red onions, feta and pepitas. Divide between 2 plates. Top salad with salmon and avocado. Then drizzle with the lemon vinaigrette. Season with additional salt and pepper, to taste.
Feel free to make this salad your own! Add some quinoa or brown rice for some extra complex carbohydrates. A hardboiled egg can boost the protein and healthy fat content in the salad. You can also add in some other veggies and greens like green onions, herbs or roasted beets. The possibilities really are endless!
